A light, soft Japanese-style sponge made using a traditional aeration technique, relying on carefully whipped eggs rather than baking powder or chemical leavening agents.

Layered with fresh cream, Angel Kitchen signature berry jam and seasonal berries, the cake is delicate, airy and fresh with a soft, cloud-like texture.
